3 Easy Vegan Dinner Recipes // Healthy & Cheap

These are 3 warm and cozy vegan dinner ideas that are healthy, affordable and simple to make! Hope you enjoy. 🙂

//Lentil Stew
-1 TBSP minced garlic
-1/2 diced onion
-1 TBSP minced ginger
-1 or 2 diced jalapeno (remove seeds if you don’t want it too spicy)
-1/2 cup diced red peppers
-1 cup grated or diced carrot
-1 tsp coconut oil to sautee (optional)
-1 TBSP whole cumin seed
-1 TBSP ground cumin
-1 tsp ground coriander
-1 tsp paprika or chili powder
-1 cup red lentils
-3 cups veggie broth

//Roasted Brussels Sprout & Butternut Squash Quinoa
-4 cups shaved brussels sprouts
-2 cups chopped butternut squash
-salt, pepper, dried herbs of choice
-1 TBSP maple syrup or agave
-1 TBSP coconut oil or vegan butter (optional)
-1 TBSP balsamic vinegar
-1 cup quinoa, rinsed well
-2 cups veggie broth or water
-1/4 cup diced onion and 1 TBSP minced garlic to flavor broth (optional)
-handful of roasted nuts or seeds
-handful of dried cranberries or raisins

//Roasted Veggie Pasta
-4 cups assorted veggies, uniformly chopped
-1 TBSP coconut oil or vegan butter (optional)
-salt and pepper to taste
-1/2 package pasta of choice, prepared to package instructions
-nutritional yeast and hemp seeds to top (optional)

  2. These look amazing. I will definitely try these. So glad to see you did not use a soy product in any of these. Soy is an estrogen mimicker, and can set you up for breast cancer.

  11. Never realized you could thinly slice/grate Brussel sprouts. I know that sounds kinda dumb, but here in the Netherlands we usually just boil them and serve them with boiled potatoes. (Very boring and I don't like that) I usually just cut them in half and stir-fry them, but I really like the idea of thinly sliced sprouts. Will be trying that tonight with tofu, leek, bell peppers, carrots, and noodles! Thank you for this, I loved your recipes!

  13. What do you have at the bottom of your pan that you put in the oven? Was it a paper? Or was it something else that is a substitute for paper and tin foil? I'd like to know, if so. I hate using tin foil

  23. I've already been making chili and soups. Tonight was actually roasted brussel sprouts with sauteed sweet potatoes, tempeh and purple onion. Now that I've seen your recipe featuring the brussel sprouts I'm definitely making that in a heart beat. Thank you for sharing.
