I worked later than usual last week, so I wanted some easy dinners I could meal prep before, and have NO cooking to do when I got home 🙂 These “dump dinner” recipes are super healthy, vegan, and easy to make. I hope you enjoy!

Recipes (all cook on LOW for 8 Hours):

Slow Cooker Chickpea Tortilla Soup

Prep bag before:
1 yellow onion, diced
2 large cloves garlic, minced
2 jalapeños, seeded and chopped
1 tsp of each chili powder , cumin, and paprika
Salt and freshly ground black pepper , to taste
2 cans chickpeas
3 corn tortillas, cut in 1/2 inch squares

Add when cooking:
1 (15 oz) can diced tomatoes with green chilies
1 cup soy milk
4 cups broth

Add before serving:
1 cup frozen corn
1/2 cup coconut milk (optional)

Slow Cooker Pinto Bean Chili

Prep bag before:
1 red onion, chopped
1 jalapeño, seeded and chopped
1 10oz bag frozen bell peppers, any color
1 tbsp chili powder
1 tsp cumin
1/4 tsp garlic powder
1/2 tsp onion powder
1/2 tbsp brown sugar
1 tsp salt
cracked black pepper
2 cans pinto beans, rinsed

Add when cooking:
1 28 oz can crushed tomatoes
1 cup water

Slow Cooker Creamy Potato Stew

Prep bag before:
2 russet potatoes, cut in 1/2 inch dice
1 yellow onion, diced
2 carrots, diced
2 celery stalks, diced
2 garlic cloves, minced
1/4 cup whole wheat flour (sub GF flour, 1tbs arrowroot or cornstarch)
1 tsp dry thyme
2 tbsp nutritional yeast
1/2 tsp salt
fresh black pepper

Add when cooking:
2 cups vegetable broth – add more if you want the soup more brothy
1 cup unsweetened plant milk (I used soy)

  9. Great idea. Could the prepped freezer bags be put in the freezer. I was thinking I could take out of the freezer at night and then dump into the slow cooker with the other ingredients in the morning.

  10. Omg this is such a great idea! I have a few bags of frozen veggies and cans of beans that I’ve been putting off using…never really thought to use them in a crockpot to make soup!

  14. I missed something. How come the potatoes stew is green?

I have never used soy milk in my tortilla soup but next time I may try it but I would put it in at the very end before serving because it does tend to make little tiny white specks which is curdling in the Crock-Pot cooking that long. The creamy potato stew soup is one I want to make right away! I don't know as though I can because of the dropping I don't have a cam person right now so there isn't an inch of space in my kitchen. 🙁
