Blueberry Almond Baked Oatmeal Cups
Bake for 20 minutes at 375º

12 servings | 177 calories, 4.5g fat, 30.9g carbs, 4.3g protein

Ingredients:
4 cups old fashioned oats, gluten free certified if necessary
1½ teaspoon ground cinnamon
1 teaspoon baking powder
½ teaspoon salt
2⅓ cup unsweetened almond milk
¼ cup coconut sugar or brown sugar
2 teaspoons vanilla extract
⅓ cup pure maple syrup
1 cup blueberries, fresh or frozen
1/2 cup sliced almonds

Creamy Avocado Greek Yogurt Chicken Salad
4 servings | 300 calories, 12g fat, 3g carbs, 26g protein

3 cups shredded chicken (this was 2 chicken breasts)
1 ripe avocado, mashed
2-3 tablespoons plain Greek yogurt
1 tablespoon lime juice
1 tablespoon finely diced red onion
3/4 teaspoon black pepper
1/4 teaspoon salt
1/2 teaspoon garlic powder
1 tablespoon fresh cilantro, chopped

Low Carb Crockpot Lasagna
Cook on high for 2-3 hours, until the eggplant is tender

2 medium zucchini
1 medium eggplant

  37. Whitney…..love your recipes. Take a look at why Iodized salt is not necessarily good for anyone and the Himalayan & sea salts are a ton better for your body. Both table salt and pink Himalayan salt consist mostly of sodium chloride, but pink Himalayan salt has up to 84 other minerals and trace elements that our bodies use up easier.
