LUNCH BOX IDEA 1

__ Freekah, beetroot and mint salad (2-3 servings)

200g freekah
2 cups water (different types of freekah may require a longer cooking time + more water)
1 tomato
2 medium beets
8 fresh mint leaves
2 tbsp. olive oil
black pepper and sea salt (to taste)

__ Tahini dressing

2 heaped tbsp. tahini
1 tsp. maple syrup
pinch cayenne
pinch pink or sea salt
½ lemon (juice)
¼ cup water (add more to reach desired consistency)

__ Coconut lemon balls (approx. 10 balls)

8-10 pitted
1 cup cashews
2 tbsp. desiccated coconut + a little extra for coating balls
1 juicy lemon (juice)

LUNCH BOX IDEA 2.

__ Classic hummus

1 ½ or 1 tin chickpeas
2 heaped tbsp. tahini
2 tbsp. lemon juice
2 garlic cloves
3 tbsp. olive oil
A touch of water to help the mixture process

__ Avocado pudding (2 servings)

1 avocado
5 pitted dates
2 ½ tbsp. raw cacao
½ cup nut milk

LUNCH BOX IDEA 3

__ Almond butter sauce

3 tbsp. almond butter
1cm cube fresh red chilli (finely chopped)
1 clove garlic (finely chopped)
1-2 tsp. lemon juice
1 tsp. tamari
2 tbsp water (add more for if neccessary)
1 tsp. maple syrup

__ Brown rice (left over) – mixed with:

tamari
sesame seeds
black pepper

__ Spelt tahini cookies (approx. 9 cookies)

1 cup spelt or teff flour
½ cup ground almonds
1/3 cup tahini
1/3 cup coconut palm sugar
¼ cup coconut oil
¼ tsp. cinnamon
a few raisins (optional)

  7. Good looking recipes but I just have one question. I think salt and oils are not considered as whole foods as the plant-based doctors would tell you. An olive is a whole food, not if the fat is squeezed out of it and concentrated in a bottle.
